The book has inspired me a lot. Honey and tamarind cake? Jamaican tiramisu? Yes please!!!With that said would have been awesome to have you give all ingredients cooked from scratch like Jamaican Ginger Cake. Also, recipes using gelatine, really? It's boiled pig bones and is so easily replaced by agar-agar just wish there were the right proportions for it.. Neverthless, great book I can see myself making most of the deserts in the book.
