I eat a borderline AIP diet but I love my starch. These noodles make it possible to enjoy both, especially asian dishes, though I've also used them as a spaghetti alternative with an alternative tomato sauce. They don't turn to mush as quickly as cassava usually does. Usually they are a good texture as long as they haven't been marinating in sauce overnight. I don't really mind mushy but my husband does, so that just means I get all the leftovers.Also, this is a lot of noodles! And they cook quickly! And if you're worried they'll taste like sweet potatoes, they don't. They taste like starch, which is to say, nothing, at least until you put a sauce on them. I like to boil them in broth, personally.The spoon seemed random to me. I have no idea what its purpose is supposed to be, but it's cute and makes a great spoon for making loose leaf tea. It is small and shallow to get just the right amount of each herb I want to add to my tea blend. I've been enjoying that the spoon reaches down to the bottom of a large mason jar as I run low on chamomile.
